When Karen Depoorter was on the look for good, honest and local produce to offer her B&B guests, she decided to try her hand at making jam of home-grown strawberries. The result wasn’t exactly what she had hoped for, but she got the taste for making jams. Nowadays, she has raised the art of making confitures, preserves, chutneys, jams, jellies and marmalades to a higher level and made it her core business (Callas Confiture). Not every jam needs to be cloyingly sweet, and next to the all-time favourites she presents exciting and unusual creations; jams with an exotic hint or extraordinary flavour combinations. In 'Onze receptuur voor confituur', Karen Depoorter opens her personal recipe book, sharing some of her special treasured jams, but the book also contains recipes sent in by passionate amateur confiture makers - all of them tested and approved by Karen. Two renown chefs create some sweet and savory treats using Callas confitures. Written in a clear, accessible style this book brings handmade jams to life for home cooks and professional chefs alike.
